Golden Mango Gazpacho

Jyoti's Tasty Tip:

 

Oh Wow! This is sooooo good, and the mango tastes much better than tomato. Whenever you can find mangoes in the market, you have to make this. It's going to change your perspective about cold soups. This one will surprise you. Try it before summer ends.

Serves 6

Ingredients:

6 fresh mangos, peeled, seeded, and sliced
1 large white onion, coarsely chopped
1 large organic cucumber, peeled, seeded, and chopped
3 cloves garlic, minced
1/2 bunch organic cilantro, chopped coarsely
1/4 cup fresh mint, chopped coarsely
2 tablespoons organic extra-virgin olive oil
1/4 cup organic lemon juice
2 tablespoons agave nectar
1 teaspoon sea salt and black pepper or to taste
1/2 jalapeno pepper, chopped coarsely
1 cup filtered water

Directions:

  1. In a large bowl, combine all the ingredients. Process in a blender or food processor in batches until finely chopped .  Transfer into a bowl.

  2. Stir in water. Taste and adjust seasonings.

  3. Chill before serving
