Roasted Sweet Potato - Caramelized Onion

Yield:  6-8 Servings          Difficulty: Easy

Chef's Notes: This is one of the most sought after side dishes in our cafe.  I get a lot of requests for this recipe so now here it is!

2 pounds  organic sweet potatoes, peeled and sliced

1 medium size organic white onion, peeled and sliced thinly

1/ 4 cup Spectrum olive oil or soybean oil

1/3 cup honey (check out the wildflower honey in the Bulk Department!)

1 teaspoon. Frontier Organic Cinnamon

Lima sea salt and Simply Organic black pepper to taste


  1. Preheat oven to 350

  2. In a medium-size bowl, combine all ingredients and place in a tray

  3. Bake for 25 minute or until golden brown. Serve hot for a great side dish or let it cool and serve it as salad.
